Prototype Derived From Yacon Prebiotics For Digestive Problems And Diabetes
The trend today is based on a healthy diet, which contains natural elements that promote health. This research project aims to take advantage of the benefits of a tuber called yacón, whose scientific name is Smallanthus sonchifolius. Yacon is a tuber that is grown in the Andean region and has compounds such as prebiotics such as inulin and fructooligosaccharide (natural sugars) also known as FOS, these compounds are unable to be digested by the human body, but they are beneficial for health, since they generate a beneficial effect on the intestinal flora and also strengthen the immune system. Therefore, it is proposed to design a prototype that contains fiber and sweetener by extracting these prebiotics present in yacón, to promote the health of people with digestive problems and diabetes.
