In the municipality of Subachoque located in the department of Cundinamarca (Colombia), there is an Association of Agroecological Producers called ASOARCE, who organically cultivate native potato varieties of the region, they need to physically and chemically identify ten (10) varieties of potatoes, in order to determine technologically what its use would be for the development of potato-based products and when the raw material that is not sold and/or marketed, can be processed to offer it in different presentations at the local and national level.
